Dinner: Mustard Cider Pork

I often feel like I struggle to find good meal ideas. The internet was once useful; now it’s a wasteland of ad-clogged SEO pages. Anyway, last night I needed to do Something With Pork, and came to the idea of mustard. Ended up with a nice recipe from Kitchn, which is a pretty reliable source of good recipes (if a bit bougie), so I am “clipping it” to my virtual notebook.

Creamy Mustard Pork Chops

Didn’t get a picture because I burned the be-jeezus out of my hand at the end (forgot the pan just came out of a hot oven, grabbed it with bare hand), but it was *tasty*. As is often the case, I adapt it a bit. I have a ton of “pork filets” (little rounds of tenderloin with bacon around them) from my mother-in-law, so those were the meat. Shallots instead of yellow onion. Didn’t have whole grain mustard so used some dusseldorf. Skipped the cream. But the end result was flavorful, tangy, sweet! Definitely a sauce worth repeating.
